Basque cuisine owes its excellence to the fresh products from the sea, from the lush sheep and cow grazing lands and from the many acres of farmland dedicated to vegetables. Basque chefs have innovated and modernized the cuisine in recent decades.
Essential Basque Country
Day 1 – San Sebastián– Donostia in Euskara–is a sublime mix of elegance and the laid-back air so common in coastal towns. San Sebastian, famous for the many pintxos bars lining the streets of the old town is equally known for the legendary Michelin starred restaurants. Your first lunch at 1 Michelin star Zuberoa. Tour of the city including Monte Igueldo and the Parte Vieja. Private pintxos tour dinner: choose pintxos – seafood, Iberian ham, grilled steak, and more–from the bar tops.
Day 2 – Artisan producer visits. Visit a cheese maker who uses ancient methods to produce both sheep and cow’s milk cheeses and a small Txakoli producer. Lunch in one of the famous seafood restaurants in Getaria. Walk along the famous La Concha beach or a stroll through the elegant streets of San Sebastián. Dinner at one of the best restaurants in Spain: Arzak Restaurant.
Day 3 – Free day in San Sebastián. For dinner choose among the many Michelin-starred restaurants in San Sebastián: Mugaritz, Martín Berasategui, Akelarre, Kokotxa, Xarma.
Day 4 – The guide will pick you up in the morning for a day trip to French Basque Country, a fascinating complement to Spanish Basque Country. First visit the luxurious seaside resort city of Biarritz, European royalty's favorite summer holiday spot. Biarritz is popular with surfers and has some of the best beaches in Europe. Take some time to see the market before heading to the charming town of St Jean de Luz, a small fishing village which became rich in the 16th century from fishing, whaling, and piracy. Return to Spain, to the town of Hondarribia just over the border, for a traditional lunch.
Day 5 – Today enter one of the traditional gastronomic societies for a private cooking class. After lunch take a coastal hike to the village of Pasajes de San Juan, where you'll have a traditional seafood dinner.
Day 6 – This morning you will drive along the Basque coast to Bilbao for a Guggenheim Museum (designed by architect Frank Gehry) visit. Lunch at Asador Etxebari, located in Atxondo, a Basque mountain village. Spend the night in Bilbao.
Day 7 – Private transfer to the Bilbao airport for your onward flight.
